Artichokes contain a variety of powerful antioxidants that scientists believe may protect and enhance cancer treatment. Studies have shown that substances such as rutin, quercetin and gallic acid contained in artichoke leaf extract are able to induce apoptosis (regulated process of programmed cell death) and reduce the proliferation of malignant cells.
According to study by scientists at the Georg-August University in Germany, many of the phytochemicals in artichokes help block the secretion of cancer agents thereby inhibiting cancer-related angiogenesis.
